Low carb-ing it? I hear ya… I love pasta, but sometimes it doesn’t love me back. Here’s an alternative to pasta that is really fun to make and is amazingly delicious.
Healthy Lifestyle Tip: Rock your world with zucchini noodles!
Zucchini Spaghetti with Sun Dried Tomato Pesto
Serves: 2
Time: 5 Minutes
Directions
1) Make the Sauce
Blend the following ingredients in a blender or with a hand blender.
- 2 1/2 cups fresh tomatoes, chopped
- 12 sun-dried tomatoes (in oil in the jar)
- 1 Tablespoon olive oil
- 2 small cloves garlic
- 3 fresh dates, stone taken out
- 2 tablespoons basil or parsley
- 1/2 teaspoon of cayenne pepper
- 1 teaspoon sea salt
2) Make the Noodles
Take 6 zucchinis and either use a spiralizer or a mandoline to make them into spaghetti noodles. (Kids love doing this!!!)
3) Mix Together
Arrange noodles in bowls… pour the sauce over it… Voi-la!
Enjoy this great, healthy, fresh and easy to digest meal.
