Juice PLUS+ Zucchini Muffins
For approximately 6 Muffins
Ingredients
- 2 medium sized zucchinis
- 2 eggs
- 1 Pack Juice PLUS + Complete Vegetable Soup
- 2 tablespoons spelled flour
- Salt and pepper
Instructions
- Preheat oven to 190 ° C / 375 ° F
- Wash zucchini and slice into sticks. Wrap the zucchini in towel and squeeze out water. Stir in eggs, Juice Plus + Complete Vegetable Soup and flour with a fork; add salt and pepper then mix everything well. Scoop into muffin tins and bake for about 25 minutes, until the muffins have a lightly browned top. Leave muffins to cool then enjoy!
